Below is a sampling of some of the great recipes in Brigitte's book "The Palm Beach Way".

Roasted Garlic Pepper Tomato Jam

Ingredients: Serving Size 8 (4-ounces each serving)
Pam cooking spray. 6 green bell peppers, 2 cans of diced tomatoes w/basil & garlic, 2 while heads of Garlic, 1tspn Sea salt, 1 bunch fresh Basil, ¼ cup of Pompeian Olive Oil. One deep sauté pan non-stick.

Cooking Instructions:
Peel & chop garlic fine. Stove top med heat, spray pan w/Pam sauté garlic and lower heat to med low. Dice peppers add to pan and sauté w/garlic till peppers are soft. Add canned tomatoes mix well and lower heat to low. (Cook for 1 hour stirring occasionally) Remove from heat and let cool down to room temp then finely chop the fresh basil and mix w/jam well and eat.


Healing & Immune Support Soup

Ingredients: Serving Size 20 (4-ounces each serving)
Large soup pot, ½ gallon of water, Pam cooking spray. 6 red onions large, 2 cans of chick peas, 3 large sweet potatoes, 1 head of celery, 1 lb fresh Ginger Root, 3 whole heads of Garlic, 1 bunch fresh Cilantro, 1 bunch fresh Basil. 1 tspn Cayenne Pepper, 1 tspn Sea Salt, 2 carrots medium, ½ cup of Pompeian Olive Oil. ¼ cup non-dairy creamer organic low fat, a good blender.

Cooking Instructions:
Peel & chop Onions & Garlic fine. Stove top med heat, spray pan w/Pam sauté Onions & garlic then lower heat to med low. Scrub Sweet Potatoes w/skin on then cut into quarters, chop celery & carrots same way. Add water to pot and bring to a boil, lower heat to low then add the celery, sweet potatoes and seasonings.  (Cook for 1 hour stirring occasionally) Remove from heat and let cool down to room temp then finely chop the fresh basil and cilantro mix 1 cup at a time in the blender adding grated ginger & herbs w/a splash of creamer repeating process till all done.


Exotic Brown Rice

Ingredients: Serving Size 6 (3-ounces each serving)
2 ½ cups of water, 1 cup of long grain brown rice, 1 Spanish onion diced, 1 bunch of fresh Cilantro chopped, cloves of garlic chopped, 1 tspn curry powder, Sea Salt to taste, Montreal Steak Spice to taste, 2 tabspn’s Pompeian Olive oil, 1 tspn Paprika.

Cooking Instructions:
Med size Sauce pan non-stick, bring water to a boil, add onion & garlic & spices & rice..Cover for 40 mins. Remove from stove add herbs, Olive oil and mix well.
